Hoping to fulfil a long term dream, but all the job ads seem to be for kids.
Would I be better to apply to all the schools listed in Oxford or Cambridge?

if you have a good employment history, you could try sending cold applications to language schools-there are quite a few in camb/Ox. take the time to check their websites and make sure they're actually running adult programs through the summer as some may choose to focus on kids and teens.

in my experience they're unlikely to offer you full time work right away, so you may need to get taken on by two nearby schools and/or develop a private clientele.

you should be getting 18/hr + for non-residential teaching. sadly, that's only classroom time.

If you have a minimum of a BA and Delta you may be able to pick up summer work on the Oxford Brookes pre-sessional course, especially if you have experience with Chinese students.

They would also provide campus accommodation.

Worth mentioning for others who might want year round work in Oxford or Cambridge that summer is a peak time (yes, for kids definitely, but for adults as well). A viable strategy might be to apply for summer work and make a good impression. Even if it, unfortunately, comes to nothing at the school you work at, you'll be building up contacts amongst seasoned Oxford / Cambridge teachers who will know people at other schools. In Oxford (I don't have experience of Cambridge but can imagine it's much the same) EFL teachers are very well networked.

I should have mentioned that I'm only interested in summer work. I actually live in Rome and looking for a summer diversion:P
