Two things:

1. Free Range Eggs. > Does anybody know any major supermarkets that sell them? I only know that some JA (Japan Agriculture???) supermarkets have them, but I no longer live near one.

Would anyone be able to tell me the word in Japanese for free range eggs? And write the kanji in this thread?

I'm one who believes that you get what you pay for, so if you pay a bit more for eggs, you'll get better tasting and more nutritious eggs. If they're free range, that's especially true. I try not to buy regular cheap factory farm eggs because sick, depressed and drugged up (with antibiotic drugs to prevent epidemics in factory farm chicken batteries) hens surely do not produce the same tasty and nutritious eggs that free non-stressed birds do.

I read in a book called Eating Animals that in Japanese factory farms, they stack the bird cages 15 cages high (compared with 4 -5 cages high in the U.S.). More birds = more chances for diseases to spread. More drugs needed to protect the birds.

2. How to check if your eggs are still edible.
You may have eggs in your refrigerator that are well past the estimated expiry date, but don't throw them out yet. Egg producers are quite conservative with expiry dates to avoid lawsuits, so often their eggs are still perfectly edible after the date they print on the egg carton.

You can check if your eggs are still good by simply filling up a bowl with cool water and putting the eggs in the bowl. If the eggs rise to the surface of the water, they're not good to eat.

If the eggs settle on the bottom of the bowl, they're perfectly fine to eat. Bon appetite! Check out the YouTube video on this. https://youtu.be/mlmojSklwdo
