If you're a 41 year old American guy with a bachelors degree and who taught English conversation informally in Japan for a year while in college, and you want save as much money as possible after paying living expenses, which of these countries would be best?
What are the best jobs in these countries, and what further education or qualifications should I be considering?

If you have taught in Japan, perhaps you could land a job at a high school. Teaching "informally" as you have done may not be considered enough, and that would limit you to conversation schools only (eikaiwas). They pay pretty much the same everywhere, about 250,000 to 280,000 yen/month, and you would be left with about 70-90,000 yen at the end of the month on a conservative nightlife of expenses.
Look here for a comparison of the three countries. Take some of it with a grain of salt.
