If I was working at a university on a z-visa and wanted to take a short term job (eg 2-4weeks in an unrelated field) during the holidays, what would my options be WRT visas?

There are two answers:
a) The legalistic one: you ought to know that you are not allowed to do this.

b) The rationalistic one: do it if you know how to avoid troubles.

Most moonlight, often with the tacit tolerance of their employers. If you don't enjoy this benefit you are playing with fire.

Legally the z-visa is only valid while you work for the employer who initially sponsored you, is that true?

Yes, of course. You can put him to a test: ask him your own question!

I think I saw yourrelated question in the Hong Kong forum; you need to realise that what you do there has nothing to do with what you are entitled to doing on the mainland; for HK you would need a speical work visa that you are not likely to obtain for such a short period and without having an official sponsor.
