With some grammar...
Tried looking around the Internet but couldn't find any information on this, so I'm hoping somebody can lend a hand.

In the following two sentences what determines the use of "and" or "but"?

I've heard that the English teacher is kind and even tempered.

I've heard that the English Teacher is kind but short tempered.

Is it safe to say that when two adjectives being used to describe a noun in this manner take opposite positions they must be separated by 'but' and if they take similar positions e.g both positive or both negative they are separated by 'and'?

I've heard that the English teacher is mean and short tempered.

I've heard that the English teacher is mean but intelligent.

I know how to form sentences correctly in this way but I'm just not sure that I can explain 'Why?'correctly.

Any ideas?

I think you answered your own questions.

What age group are you teaching? Grammar is usually taught exclusively by Chinese teachers who can teach it using grammar-translation.

That's how I would explain it, but I wasn't sure that it was a correct explanation and I hate giving the kids misleading or incorrect information.
I'm teaching a summer class with a group of 15 kids and young adults who range in age from 13 - 21 but whose English levels are all relatively comparable. The book we're using has a lot of 'Grammar Check' exercises. They help the students to communicate orally more precisely so I feel like I should at least be able to explain the points if necessary.
