Not in Latin America, but have you tried looking at the Instituto Cervantes website, and then following up the Peru links? Whoever teaches it should have a good list of bookstores. Or, the company that produces really good DELE materials has a website.

And study hard, preferably with a very good teacher. One of the hassles of DELE exams is that they can be fairly into idioms. And the idioms they're into are from Spain.
