Hi, can anyone tell me if ALL Central and South American countries require a degree to get a teaching job in them? Thanks ...

NOt required, but the better jobs do. You can find one without a degree though.

We've been around, but I seriously doubt whether anybody on this forum knows ALL Latin America. If you list a few countries you're interested in, you may get more info.

Ecuador doesn't legally require a degree, but some schools will.

Mexico is strange that in technically, you do need a degree, but then you'll find that immigration departments vary from state to state. One thing that's likely true for all Latin American countries is that what the embassy tells you is far more strict than what they say on the ground here.
