Hi,
am currently thinking of setting up a 'działalność gospodarcza' for myself and working for a school in this way. Does anyone have any information concerning paperwork and the actual running of sucha business?

It's quite easy, but there are a few steps involved. The school you work for will almost certainly help you, since it's very much in their interests for financial reasons.
You need to have a zameldowanie (be registered where you live). Temporarily is fine.
You need to complete a few forms and pay (I think) 700zl as your first ZUS payment. You will need to do this monthly.
You will also need a bookeeper which will cost about 200zl (offsettable against tax). Your school's bookeeper will probably be pleased to oblige.
