Met someone from the states who was a really nice young guy, not a washout or a punk, but didnt actually have a degree yet had been teaching in Japan for quite some time now.
Just curious to know if that's common, if any of you have met teachers like that. He did seem younger, more sociable and able than most degree holding, uncommunicative dinosaurs I've come across in Korea.

You should have asked him what kind of visa he had. What exactly is "some time"? 6 months or 6 years. There are a variety of visas besides a work visa, all depends on what you qualify for.

Is your post suggesting that those with degrees are incompetent dinosaurs or only those in Korea. I agree that Korea attracts a strange bunch of misfits, not all, but many. That often happens in countries where money is the prime motivator of living in a country.

Did you ask him if he's married? he can work on a spouse visa if his wife is Japanese.

Maybe hes a student and working part time. Full time sponsored work visas require a university degree.
