So a few questions:

I'm either going to end up with weekly work or volunteer work. I will be in Thailand for two months.

How should I handle the visa process? Should I wait till I'm in Bangkok or get it in CA before I leave?

^ Hi

Go to the Royal Thai Consulate in Los Angeles (or mail your passport to them)

and ask for a 60 Day Tourist Visa; better than waiting until you get here.

You could get by with the free 30 day on-entry-stamp at the airport, but

you'd pay 2,000 Baht on a visa-run to extend it for another 30 days.

The 60 Day Tourist Visa from the consulate is $25 or 813 Baht,

meaning it's cheaper and you won't need to do a visa-run.

Which is the best bordering country to do this?

I take it you can go to Thai Embassy in Phnom Penh and do the same? I'm considering doing this at the embassy in Tokyo but it's actually quite pricey.

Many people go to Vientiane for a 60 Day Tourist Visa

although I'm sure you'd get one in Phnom Penh as well.

When it comes to extending, you can do that anywhere.

The first two links below are well known Bangkok services.

Thailand has only one consulate in California; in Los Angeles.

Call them and ask them if you can mail in your passport.

Based on this paragraph, I think you can do that.

You can also download the application form.

It may seem like a minor pain in the ass, but the alternative

is an 8 hour visa-run to Cambo @ 2,000 Baht - $61 dollars.

As they say here in The Land of Smiles, 'up to you.' Very Happy

If you choose to be legal during your stay in Thailand. Ask the organization to supply you with the paperwork to get a non-immigrant B visa. Upon arrival, ask them to provide you with a work permit before stating the volunteer work. Yes, legally you need a work permit to do volunteer work. May not be checked, but in this climate?????

Remember during the tsunami aftermath when the MOL made news by declaring that tsunami volunteers needed work permits to help out.

^ Hello Sgt. Killjoy

The OP is planning to stay in Thailand for two months.

That's why I didn't bring up the Non-B Visa & WP issues.

Exactly Kent Smile

Ain't no way to get a legit visa and work permits, usually no problems, but this is something that should be brought up. In previous governments, I'd say no problem whatsoever, this is Thailand.....but ????? I'm 99.9% sure no problems........

Can I use my 60 day visa to do multi entry in Thailand? For example ,I'd like to go to Malaysia or Singapore and need to return to Thailand to leave for the USA from BKK. Can I request a mutli entry visa even
though I don't have my ticket from BKK to Singapore purchased yet?
