Goodday! Just signed up for this forum. I need some help picking the best city in which to teach in terms of work opportunity / conditions and opportunity for "authentic" immersion into Chinese language / culture. I was hoping for somewhere in the south, like Guangzhou, Yibin, Chengdu, Kunming... Xi'an also seems interesting. I have little impression of these places beyond what Wikipedia has told me so I'd appreciate any help.

I'm not quite sure about an "authentic" immersion into the ancient China, but if you want a feel of what China is slowly emerging into, I suggest Shanghai.

One day there will be a McDonalds, KFC, Carrefour and Carlsberg beer girls in every town/village in China.

You should definitely go to SUNJUCHOW in the south,. except that BINBANBOOM in the north is much nicer. However, JINFOOO is probably the best choice out of ALL of them: because of course it holds the exact set of characteristics you are looking for in your China Experience.

To the OP, I would like to apologize for the tone of my response to you. I did not mean to sound nasty. I recently broke up with my girlfriend and I took it out on you in the forum. I should not have done that. I am sorry.

But you will get more replies to your query for information if you ask specific questions about specific cities. For example if you ask "What is Guangzhou like?" I am sure people who live, or have lived, there will respond.
