I'm curious if anybody out there knows what the job market is like in Oman for esl teachers? I'm qualified at the Masters level with four years' teaching experience. Would it be prudent to just show up in Oman (or the UAE) and look for work that way?

The Gulf doesn't work that way. Assuming that you have a related MA and your experience is in Academic English (not pre MA conversation classes), you should qualify for most of the decent employers. Many places will be hiring for 2nd semester, so send in your CV asap if that is your interest.
Also, you may want to consider attending TESOL Arabia in Dubai in March. Most of the bigger employers interview there, but it will be for positions next August/September.
