I have been offered a job in Saudi Arabia (decently paid Uni job, acceptable benifits), but have realised it would be better to go in 2009 (due to very complicated reasons). I am a little worried that I may be letting a good opportunity slip by, so my questions is: Is there always a decent quantity of acceptable jobs in Saudi Arabia to choose from?
I have an MA in TESOL, 12 years teaching experience and a K-12 licence in ESL from New York.

Right now, there seems to be no shortage of teaching jobs in KSA, at least for male teachers. Whether or not they are 'acceptable' is, however, a matter of opinion. |

You really need to be more specific. Have you searched this branch about the institution? Is it one with a good or bad reputation here?
If it has had good reviews, write to them and tell them that you are unable to go this year, and could you re-apply next year? (keeps the door open)
Most places are hiring every year... both the good and the bad. With your qualifications, you should be able to get a job at any university in the Gulf, not just Saudi. So, I see no problem...

Does teaching English for special purposes, e.g. science, pay better than ordinary English teaching? |

Not that I have ever heard of...
The highest paid jobs tend to be working for the military.
