What do you do with it?

We always seem to waste an exhorbitant amount of salsa. There must be something you can do with it. Any tips?

Same thing you do with all the extra tortilla...put it into chilaquiles.

I throw away quite a bit of extra salsa too.

Ours goes into the fridge, uncovered. It dries out a little over night, take it out of the fridge and add a bit of water and there you go--a dish of salsa.

The easiest way to not throw away salsa is:

Don't make too much. And... with all the citric acid, onion and capsicum, it doesn't go bad too fast anyhow.

The only issue I ever have is not enough salsa. Try Huevos Rancheros. Mix it with EVOO and use as a salad dressing, top your steak with it. If it's heavy on tomato and not heavy on chile, use it with some consome de pollo to make rice.

There's got to be a million ways to use salsa.

I have an even better idea - why not cover the left-over salsa before putting it into the refrigerator and then you won't have to add water to it the next day!

What kind of salsa?

Salsa Mexicana:

1) Make Huevos a la Mexicana

2) Add to consom� de pollo to make it less like chicken water

3) Have mollettes for supper

....use it to treat migraines, headaches, or sinus congestion. there's a paste out on the market you can buy that is basically jalapeno juice. you apply the paste to your temples, above eyes, etc...and the headaches should go away.

....take a Qtip and dip it in your salsa, then apply / insert directly into your nose. or, take the salsa and spread it out evenly above your eyes, on your forehead, and temples after a long day of Interchange.

I've noticed that eating anything with chile in it makes my nose run and sometimes unclogs my often clogged sinuses, but the idea of sticking salsa directly into my nasal passages does not appeal to me!

have you tried freezing it? I never have, but my thought is that it's kind of like tomato sauce, and it freezes really well. If you were going to through it out anyway, the risk of ruining it is pretty low...

Diana Kennedy (one of the foremost authorities on Mexican cuisine) says you can freeze just about any cooked salsa and it may separate a little upon defrosting, but will be fine.

Uncooked salsas, like pico de gallo, you can refrigerate in a glass (non-reactive) jar for a while, depending on their acidity.

Because then it goes off--it will ferment if covered.
Same with bean. Let them dry out and they will last for ever, cover them and they are moldy the next day.

I actually worked in a restaurant in Mexico for a short while. Here's what they did:

1. When bussing a guest's table, carefully remove any leftover salsa along with dirty dishes and silverware.

2. Carry said items into the kitchen and out of view of other guest's.

3. Transfer leftover salsa into clean serving container. If no clean containers are available, simply wipe the rim of the original container to make it look cleaner.

4. Carry the leftover salsa back to the table and politely serve it to the next unsuspecting guest.

Sad but true

Maybe the vitamin C in the chile killed any germs deposited in the "pre-used" salsa! But all I can say is "Yuck!" and "shame on them!"
