Not so many people are actually working now as it's the middle of the 2 month summer holiday period (for schools and unis). Of those who are working now (in language training centres, and summer camps), most probably got their visa a year or several months ago.
At that time the visa application conditions were very different from what they have become at present due to the Olympic paranoia/security here.
There would be quite a few people in the midst of applying for their visas at present for the academic semester commencing about Sept 1st though.
You should accept a position and apply ASAP. The Chinese partner university will need scans or photocopies of your qualification documents, your resume and your passport ID page in order to prepare an invitation letter and acceptance from the PSB (Public Security Bureau). They will then post/courier these to you in New Zealand where you will apply for a Chinese Z/Working visa at the nearest suitable Chinese Embassy/consulate.
Unless IIBT have asked you to visit them in Western Australia before you head to China???
