Am I incorrect in thinking you need to be offered a contract for a full-time job to be eligible for a work visa? I can't find this written in stone anywhere, but I heard this before, and was wondering if, in fact, it's actually true.

Essentially true. At least for the first visa. After you have worked here a year, you don't need to have just one employer sponsoring you, either. If you can find enough part-time work then, you can "self-sponsor" yourself.

"Enough" means work that provides you with a guaranteed minimum salary. Immigration does not accept private lessons as guaranteed, and they don't have a strict figure on what is minimum, so go by subsistence wages (roughly 170,000-180,000 yen/month).
