I recently received several job offers to teach at universities in China. At this point I have not been presented with any formal contracts, only douments outlining general requirements and benefits. Does this typically occur after they have recieved hard copies of my CV, passport, TESOL certificate, etc.? Is it appropriate for me to present these prospective employers with a sample contract of my own? Would it be better to begin discussing the important items I want in our future contract, or simply wait until after they have presented one to me?

There is a standard contract issued by the State Foreign Experts Bureau - it may have changed its name - that outlines the basis for your relationship with your employer. They can fax you this: request it. However, it isn't very specific re the sorts of things you're concerned about. You should negotiate the main areas by email to get an agreement. Take the mails with you, and get an addendum drawn up to be attached to the formal contract, in English and Chinese, stamped and signed. This includes the conditions they've offered such as airfare, holiday pay, tax etc, as these aren't in the basic contract.
This should do the trick.
