Anyone living in my ideal Latin American city?

Hey All,

I have been trying to narrow down a country and more specifically a city to look for a teaching job for a while now, and it is rather frustrating. So many countries and cities, but do they all have what I am looking for? Pretty much all I have to do is decide where I would like to live, then just go and find a job, (or atleast be able to do more research about schools in that area to send my resume to.) Err, I need some help. Perhaps someone is living in my 'ideal' Latin American city?...

-Beautiful architecture, old colorful buildings, cobblestone streets type deal.
-Cafes to have a cup of coffee, sit and mingle with locals.
-Nice parques/centros to stroll and buy local goods and delicious street food.
-A decent nightlife
-Friendly locals
-Multiple colegios/unis -for work of course!

I thought that living near the water would be best for me, I'm not narrowing it out but I don't think I can get both in one city. (Or maybe such a place exists?) Anyways, I have been looking at Ecuador, Colombia, and Mexico, but I really don't know which city to zoom in on. Anyone living in my ideal city? Open to any suggestions and/or advice you can give!

Trujillo and Arequipa might be two places to look at. Trujillo is a university city, so that's a plus. Arequipa has a few unis, but it's a gorgeous city.

Cuenca has everything you're looking for except a coastline. Loja is quite nice as well, huge university, and is a ecological city. For the coast in Ecuador, check out Bahia Caraquez.
