a few weeks ago, i sent a picture of a signed contract to a university here in zhengzhou. i have not yet signed the contract booklet that they need to apply for my FEC and residency permit.

but i've been offered a much better job down south that i can take immediately, and i'd much rather be there than here.

so i guess my question is, is that contract photo legally binding? can i still get out of here or am i stuck?

Nothing is legally binding until both parties sign the contract.
I would not take it seriously until you both sign it in person and they begin to process your FEC and residency.
That contract you signed is just the first step in negotiations, it really does not mean anything.

If you sent a signed copy as an email attachment, no, that isn't fully binding in China. But that is most likely what the school needed to begin applying for a work permit for you. Once they get the work permit, then they can apply for the invitation letter. Both cost the school time and money. You are still free to accept another job, but you should let the school know as soon as it is a sure thing that you won't be coming after all. It may save the school a few yuan and hassle, and they can concentrate on other applicants.

You mean you are presently in Zhengzhou and are having face to face communication with the school, they have a contract for you that you have seen but you have still not signed?

If that's the case then yes you can take the other job but of course I agree that you should let the school know.
