So it turns out that I have a contact (through friend of my mother) in the American consulate in Turkey, and in trying to find out very details about staying in Turkey, she claimed that my plan was untenable. She claims that Turkish policy has recently changed, and that now, if you come to Turkey on a tourist visa, find a job, and try to make a run to the EU for a work visa, you will find yourself barred from re-entry for three months. She also says not to trust anybody who hasn't done this in the last year, as it's a very recent change.

Is there anything to her claim? I think she might be confused, possibly because some Americans work illegally in Turkey, and might omit this detail when talking to the consulate. I contacted the Turkish embassy, and they told me that it's still perfectly acceptable to Turkey on a tourist visa, find a job, go to the EU, and come back to teach on a work visa, as long as I don't try to teach on a tourist visa.
