Is this going to be a terrible time to find hotels? Or perhaps the opposite, since Christmas is only celebrated by very few there? Do you think hotels really fill up at that time, for example anywhere between Dec. 22 and Dec. 27 or so?

Christmas passes by almost unnoticed in Turkey apart from by the very small minority of Christians, and expats. All businesses and companies work a normal day.

Istanbul is not a popular tourist place in December, as it is cold, wet, and often there is heavy snow, leading to muddy streets.I'd be very surprised if hotels were full. New Year is a much bigger celebration.
