My question is... if your housing is provided, who can come and stay with you when they visit the UAE? Who can't? Any experiences?

| Folks can come and go. Your employer, in all likelihood, would not be checking up on you. Your neighbors might inquire if a member of the opposite sex took up residence in your home, but only if you had pissed them off in one way or another. |

It is not like living in a compound where you work with all your neighbors and everyone knows everyone's business. 
Use common sense and discretion and your employer will never know if and when you ever have any guests.
