A: Have you ever gone to Paris?
B: Yes, I have. I have been to Paris.

A: Have you ever been to Paris?
B: Yes, I have. I have been to Paris.

Are both correct?

Both are correct but if you were born there and never left you have been in Paris while you have never gone there.

Ok. How about?

A: Have you ever gone to Paris?
B: Yes, I have gone to Paris.

I claimed this was correct. Am I right? And even better, could someone point me to a source?

Of course it's a correct sentence, but whether or not it's the best sentence depends on context. The focus here seems to be on the going not on the city itself.
