Qinella: Try one! Buy the hotdog buns also available at Costco and you've got a meal in less than 10 minutes. You can even use ground pork and it tastes good!
Ya-ta: If it were a rainy Sunday, I'd go with meatloaf, but being as it's nice, go with the Joes!

By popular demand, here is the award-winning recipe for meat loaf, right off the Quaker Oats box top:
Meat Loaf
1 1/2 pounds of ground beef
1 cup of tomato juice (tomato sauce and ketchup both work)
3/4 cup of old fashioned uncooked Quaker Oats
1 egg, slightly beaten
1/4 cup chopped onion
1/2 t salt (optional)
1/4 t black pepper
(I added a capful of A-1 sauce for a bit of extra flavor.)
Heat oven to 350 F and bake one hour. Let cool for 5 minutes before serving.
Cooking tip from Ya-ta: Cover the bottom of the pan with two slices of bread--to soak up the grease. Remove before serving.
The Quaker Oats people claim you can make 8 3 x 2 inch mini-loaves and bake in a microwave for about 10 minutes (covered with wax paper). I've never tried it.
Sloppy Joes
1 T oil
1 large onion, chopped
1/2 red bell pepper, chopped
3 garlic cloves, crushed
1 pound of lean ground beef
3/4 cup chili sauce
1 T Worcestershire sauce
2 t cider vinegar
1/2 t salt
1/2 t black pepper
1. Saute the onion in the oil, then add the bell pepper and garlic and cook about 2 minutes.
2. Add the ground beef and brown.
3. Reduce heat to low and add the other ingredients. Increase the heat and bring to a simmer. Cover and cook about 5 minutes, until the sauce has thickened.
4. Serve on buns or split rolls.
I decided since it was Sunday that I should have something 'special', so went with the meatloaf. Sloppy Joes are more of a weeknight delicacy. ^^
Current dilemma: What to do with the leftovers. Can't have meat loaf, baked potato, green beans and a salad for lunch everyday. What to do? What to do?
Re the comment about Korean beef. I agree. Korean beef is fine. Expensive, but fine. My point is that I am boycotting Korean beef (with the very occassional lapse of principle) as long as the government boycotts American beef. It's a personal thing. |

Meatloaf and Sloppy Joes are the "Moe" and "Shemp", respectively, of American cuisine. |

JongnoGuru: I don't know....to me, meatloaf is "comfort food"...not something to be cooked on a warm, sunny day. Cooked on a chilly, rainy day it warms up the house. Since Sloppy Joes only take a few minutes and you cook them on top of the stove, they're for warmer weather when you don't want to heat up the kitchen.
Leftovers? You could cut them meatball-size and have spagetti! Meatloaf sandwiches? |
