I'm currently working with some people from South africa and they don't have their physical piecec of paper but managed to get their visa....

will some kind of trasncript and letter suffice? is it different for canadians than south americans??

Yup, Immi wont give you a Visa until you can show them the physical B.A/B.Sc (or an embassy nortorized copy) and sealed transcripts. I suspect that the South Africans may be illegal.

I've heard that a couple people were able to get their degree early by petitioning the university and claiming the lack of a physical degree was keeping them from being gainfully employed. She could try that. This happened with an American university, so I'm not sure it'll apply to Canada.

Myself, I just waited until I convocated... jobs will still be here and you have a couple months to chill and visit family/friends you wont see for a year.

Agreed. Take your time and make sure you don't break Korean law by teaching without a diploma. Some crooked private schools (hogwans) will tell you "It's okay", but it's not, and you can be fined and deported if caught. Be smart and wait.
