When do you know kimchi has gone bad?

I was gonna make kimchi fried rice today but when I open our mega box of kimchi the smell was a bit putrid. Now some will say that kimchi always smells like that, but this is a garbage smell.

Is it ok to it use for kimchi fried rice? After all, the original use was for old kimchi.

Fresh kimchi smells like...kimchi

As it 'ages' it gets a sour smell (this is when it's ideal for chee gaes).

Then as more time goes by, it goes rancid, sort of like what you're describing. Is it off-colour?

Get your lazy ass out of the apt and get some from your local ajummah.

As long as you don't see any fungus growing on it it is oke.

Kimchi "ages" and the taste changes a bit after a while.

My personal favorite Kimchi should be at least 6 months old, with a faint sparkly taste to it.

Even after it gets a little funky, you can still fry it and make kimchi fried rice or add some water, salt and other stuff and make kimchi chigae. That's what Koreans usually do with old food. Toss it all into a pot and make a chigae.

I haven't taken a good, healthy, solid dump since I got to Korea. I attribute it to Kimchi. Kinda more like short lumpy, stringy bursts than a good healthy log.

Now that, my friend, is foul.

I think most kimchi is okay until there is some milky white fluid that starts dotting the kimchi (overaccumulation of lactobacilli), then it is time to throw it out.

Well I've tossed out the whole bunch! It's all bad,bad,bad. It's been in the fridge for over a year so I guess it was time. Damn waste I tell ya! Now I gotta track down an ajumma for more. The store bought stuff don't cut it!
