i bought some Ottogi Pancake mix, added milk and egg. Made the pan very hot, but they did not come out golden brown. I think it was because I used olive oil. I guess I need to use butter or margarine. Can you give me any other advice on making great pancakes? Any other ingredients easy to get in Korea that can enhance them?

A good trick to make pancakes fluffier is to add a dash of lemon juice to the batter.

I usually just add water to the mix and they turn out okay.

A non-stick pan without any butter or oil usually works.

For fluffy, home-made pancakes:

1 1/2 cups flour
1 teasp salt
1 Tablesp sugar
1 tsp baking powder (any grocery store has it)
1 egg
3 T melted butter (or oil)
1 1/4 cups milk

They will be even fluffier with more baking powder. NOTE: After you flip the pancake, DON'T squash it with the spatula.

This recipe also works well with blueberries or apples added to the batter.

Adding more milk will help with the "fluffy-ness" (just not too much) and don't beat your batter too much...gently fold for a min. at most.

With any pancake/fritter mix if you want to lighten things up, separate the yolk and white.
Mix yolk as per norm. but beat whites until stiff.

At the very end before cooking GENTLY fold the whites through the mix

(gently so you don't pop yr little bubbles making it stiff) as if you were prepping a meraunge? (SP!!) meranguie? marangie? white/brittle dessert!

This works esp. well when making whitebait fritters as you get more volume for yr $75/kg whitebait.

P.S. I think O.Oil vs Butter ain't yr problem. Cook with o.Oil + serve with butter is my pref. (cooks hotter, harder to burn etc.)

P.P.S. For real yummy pancakes, grate an apple into the mix, serve with yougurt and strawberries/blackberries/WTFberries ya got and you have gone from junk food to good breakfast Presto!!

Well, we can 'em whitebait fritters, basically just salt, pepper, eggs (split)and whitebait.

Are we talking about the same whitebait? I'm talking about little riverrun fish about 50-70mm long from the west coast of Noo Zild. Maoris call 'em Ianga I think.

I dunno 'bout fluffy pancakes, but I like to add cinnamon to the mix. Also, my family sent me a big box of Bisquick so I've been putting that bad boy to use. Yesterday I made some tasty fried chicken and biscuits an used Land O'Lakes butter....fried okra with a pinch of salt would'a been the icying on the cake!

I use this recipe and it turns out fine every time.

1 cup of flour OR 1/2 cup white flour and 1/2 cup whole wheat flour
1 egg (I substitute 2 eggs whites)
1 tbs sugar (brown sugar if using wheat flour)
2 tbs oil or melted shortening
3/4 cup milk
1/2 tsp salt
3 tsp baking powder
optional: 1/2 cup blueberries

beat egg until bubbly and add other ingredients and MIX WELL. Cook on hot griddle or fry pan in a little oil or use cooking spray.

about 100 calories/pancake without blueberries

I just mix two eggs into the batter to make mine so, so fluffy. Milk, too. Man, would I love to have some fresh raspberry pancakes right now.

Apples and blueberries are good, but I prefer chopped up banana (I slice it in half lengthwise, then into quarters lengthwise, then chop into pieces into the batter). Cook up the pancakes, and the banana gets a bit gooey when you cook it. Everyone who has had my banana pancakes (or sometimes banana chocolate chip) has loved them! Give it a try!
