In late 1990s, Ahn Yo from Seoul National University College of
Medicine, Korea, observed that stomach cancer was the most
prevalent malignant neoplasm in Korea. He noted an increased risk
of stomach cancer was among those who frequently had broiled
meats and fishes, pickled vegetables, salted side dishes and salty
stewed foods, such as soybean paste thick stew as their meals. On
the other heand, Dr. Ahn Yo reported that ginseng intake could
decrease the risk of gastric cancer in his review article.[Diet and

I don't know about cancer, but I do know that kimchi can trigger arthritic symptoms, interfere with getting a sound sleep, and probably is responsible for some of the ADHD type behavioral problems we see in students.
It's the red pepper, stupid!
If they would just stop eating it for a week, they might feel a lot better. |

It's the salt.
The incidence of stomach cancers has dropped in Western countries since the invention of refrigerators. Previously, people would eat a lot of food that had been preserved in salt.
A recent Lithuanian study correlates the high incidence of gastric cancer in that country with the popularity of salted meat.
A Japanese study a couple of years ago concluded that there is an even greater risk of gastric cancer with eating foods that are both salty and spicy.
I read somewhere that the incidence of stomach cancer in Korea is decreasing. Some scientists think it's because Korean tastes have changed, they say people now prefer salt that is less salty than before.
I think many people just miss the point when they say that kimchi fights cancer. The question is not whether kimchi fights cancer (it obviously doesn't because of the high content in salt) but rather whether it contains chemicals that can be isolated and used to fight cancer (which it does...but you can say that about any food that has red pepper as an ingredient because capsaicin is known to kill cancer cells). Find a way to make kimchi without the salt and you've got yourself a cancer fighting food. |

Pickles, pickled eggs, pickled veggies... all forms of pickling have been found to be associated with stomach cancers
I have been saying for years that kimchi (as pickled veggies) likely is a causal factor in the high incidence of stomach cancer in Korea, and NOT because of the hot peppers.
Everything in moderation, but for Koreans, it's going to the extreme: kimchi and rice with every meal.
I eat kimchi with three or four meals a week, though I do worry a bit about overall intake of acidic foods and sodium.
Fresh is always better than preserved. Koreans don't know that.
Eating more fresh, healthy Western-style salads are in order. I think I'll go shopping for fresh tomatoes, purple onions and celery this afternoon. Excuse me. |

I wonder what sort of role soju plays in the high rate of stomach cancers / problems witnessed in Korea. The level of stomach problems Koreans experience is amazing. I wonder if there are any people in these forums who have been a year or longer in Korea, who haven�t meant at least three or four people with chronic stomach problems.
Pickles are generally good for you but as some have mentioned it, in moderation!
Actually a vast majority of Korean food is way too salty. I like Korean food and am glad it has such a high number of vegetable dishes but the levels of salt are worrisome. |

I don't think Koreans eat huge quantities of kimchi. They just have a little bit each time. I could be wrong. I find I eat more kimchi than Koreans do when eating out with them. Maybe because they it a lot of it in the morning? |

I'm not so sure they throw it away, guy. Do you really think all those side dishes you didn't touch get tossed when you leave the restaurant?
Like many things here, I don't mull over this too much, but it's just my hunch. |
