Tomorrow evening some of the teachers here are having a BBQ and I decided to contribute some Pineapple Soup (because everyone else is going mundane and bringing some kind of salad).
I'm assuming it will be hot and a cold soup might go over well. Here's the recipe I found...
� 1 cup fresh pineapple in 1/4-inch dice
� 1 cup pineapple juice
� 1 tablespoon extra virgin olive oil
� 1/2 seedless cucumber, cut into 1/4-inch dice
� 1/2 small red bell pepper, seeded and cut into 1/4-inch dice
� 1/2 small onion, cut into 1/4-inch dice
� 1 medium garlic cloves, minced
� 1/2 small jalapeno pepper, seeded and minced (optional)
� 1 tablespoon and 1-1/2 teaspoons fresh lime juice
� 1 tablespoon chopped fresh parsley, basil or cilantro
� Salt and freshly ground black pepper

It's all good enough, but I don't like cucumbers. I thought I would puree the pineapple for a base and sub a can of fruit cocktail, some mandarin oranges and some red and green cherries. However, I think it would be a good idea to add something else for more flavor to the soup base.
Any ideas? |

This is not soup, but it reminded me of Ambrosia salad:
1 (11 ounce) can mandarin oranges
1 (8 ounce) can crushed pineapple, drained
3 bananas, sliced
2 cups flaked coconut
2 cups miniature marshmallows
1 cup pecan pieces
1 (16 ounce) container frozen whipped topping, thawed
1 cup maraschino cherries
In a large bowl, combine mandarin oranges, crushed pineapple, bananas, coconut, marshmallows, and pecan pieces. Fold in whipped topping. Garnish with maraschino cherries. Chill for 1 hour or overnight.
**You can sub for fruits you like (i.e. grapes instead of bananas) or add.

I think you'd want something green and crunchy to replace the cukes for the sake of color and texture, if you're using the recipe as posted, and maybe a tiny bit of cumin to add depth to the heat.
If you're replacing the veggies with fruit salad, then maybe some coconut and/ or grapes would be good. |

Change the pineapple to watermelon.
add a bit of orange juice.
Funny... this is actually (ALMOST) the exact recipe I have for watermelon gazpacho except for the, uhm, pineapple. |

Some good ideas there. Thanks. (I'm not a melon of any kind fan, though.)
I'm anxiously awaiting my next trip to Costco to get some blueberries for some soup. |
