I've got a two day stop over and would like suggestions on what to do.

I've looked online, but wondering if there's someone who's been and can recommend what to do.

I arrive at 1 pm on a monday, and leave at 2 pm on a wednesday.

If you are not rich go to Lhamma island which you can take a boat to from close to central. Get a cheap hotel there and enjoy the relaxed atmosphere and it's easy to get back and forth to the city from there.

Or if you have the cash go to macau and gamble.
