Mmm, nanaimo bars. Nothing like a hunk of butter encased in chocolate to celebrate the season. |

After trying a few different recipes, I think this is the best one. For the cocoa powder on the bottom layer I use the Hershey's dark cocoa powder.
Instead of the Bird's custard powder (a British item) you can use Jello instant vanilla pudding.
I put in a lot more walnuts on the bottom layer than the recipe calls for--probably double. And more melted chocolate on the top.

I'm not sure if all of these products are now available in Korea at say WalMart etc. You could always beg the relatives back home to send you a care package of the western ingredients--get lots of graham cracker crumbs if you're going to make a few batches--1 box doesn't go very far. |

Thanks! The friends and I are mostly exchanging homemade gifts this year, so they'll those will go nicely with cranberry almond oatmeal cookies, peanut brittle, and butter tarts. |

For anyone doing any Christmas baking, I highly recommend you use the Korean cocoa powder rather than the cheap, nasty Hershey's stuff. Take a look in the baking section of Homeplus, it comes in a zip-up plastic package. It's dark, rich, and very flavorful. |

I was hoping to find almond bark and powdered sugar to make peanut butter cups to share with my co-teachers and office staff. I got the small cup cake papers at Emart to do it with, something I always wanted, but could never find in America. I think I'll bake some cookies instead.
It's Christmas season and I saw the most beautiful snowy weather early this morning out in rural Gangwondo. It was so such a puffy white blanket draped on the pine trees and traditional roofs. Very pretty until it melted around noon. I hope it does some more snowing.
Happy holidays and may this season find you warm and happy. |

The first time I ate, or even heard of Nanaimo bars, oddly enough was my first week away from home at UBC.
There's lots of calories coming in the next couple of weeks-I won't be making any of those bars, as it's a losing battle. |

Someone at Hershey's woke up and realized people like real chocolate.
The dark chocolate cocoa powder is fine--it's not like those nasty Hershey's Kisses that taste like puke.
I use Baker's semisweet chocolate (baking chocolate) for the top layer. |
