the first time i tried it was the samgaepsol style and i thought it was just okay, but the last couple of times i've had it, i've either gotten the smoked variety or the yumyum (kinda like dalk galbi style i guess?) kind and it was insanely good. definitely beats galbi/samgaepsol on any day.

I haven't had much duck in Korea, only the samgyupsal style, but in my new neighborhood in Busan I'm seeing duck restaurants everywhere. Do you happen to remember the Korean names for these different kinds of duck?

The one that's in a soup with ginseng and wood, is that basically samgyetang with duck instead of chicken?

Same here. Just normal style is OK. I think I prefer pork samgyupsal. But the BBQ/smoked style is something else altogether.

Swan breast is really good


My father has a pond (though he doesn't shoot ducks himself, it's some kind of farm drainage deal) that we used to shoot on quite a bit. Down in Southland. We usually just took the breast and left everything else. Stirfry was usually the way to go. Heaps of soy sauce. Or roasted with heaps of glaze. Was never that great though. Smoked seems to be the way to go. Might try it next time I have some ducks. It's not like they are hard to get in shooting season.
