rice noodle question

I recently went to emart and picked up some of the flat rice noodles from the refrigerated section. Could someone please tell me the best way to prepare these? Ive searched around and some places say to soak them in water before boiling, but I cant seem to get a definite answer. And also, are these fresh even though they were found in the refrigerated section, and if so how long should they last?
