Pretty much is, I'm Canadian and I'm thinking of living in Seoul and possibly starting a life here. My GF is Korean, and it's getting pretty serious, but I'm don't want to teach English just to stay here.

Cause I can stay here for 6 months w/o a visa, and I'm not really working here (I might take some Korean language classes... but that's about it really...), could I make a "visa" run and come back to renew the 6 months?

yes.

i have some dodgey friends who work illegally here and all they do is go into immigration every three months and extend their tourist visa. so as long as you have a ticket out of the country for some point in the future, i think you can extend it quite often with no real problems.

That's if you can handle the constant questioning from immigration officials about why you keep going in and out of the country every six months.

You could get a student visa and still work but that means paying tuition at a university language school.

As long as you can show a place to live (with your G/F) and means of support that does not require working illegally (living with your G/F is acceptable) then you have no problems with immigration and repeat entries into Korea.

Can I just show them my bank statement? I'm making enough in American that doesn't require me to be there. I just really enjoy living here lol

If it is an American bank statement that shows sufficient income or assets then yes; you can stay for years as a tourist.
