Since everything is going to be closed for Chusock, I thought maybe I could rent a car and hold up in a cabin or condo or something along those lines in an area outside of Seoul. Does anyone know if such things exist in Korea? I've tried googling; I'm not the best with the language and English searchs are coming up short.

I can't give you specifics but there are plenty of pensions and bungalows on the islands around incheon. I stayed in a shitty little bungalow a couple of summers ago. I would look out my window at the pension nearby and wish that I was friends with the people staying there. I went to Muuido.
