i really like the free soup that come with sushi. i asked my lady friend what the name of the soup is and she said "guk mul". i wrote it down in order to investigate later

i have since come to realize that guk mul just means soup and so my hunt for a recipe was fruitless. i asked her again and she said it is "sushi guk mul" which i guess she probably just pulled out of thin air because she can be like that

so... if you can, tell me what the name of this simple soup is and if you have a recipe, please post it

thanks

Yeah, I'm pretty sure friend didn't know, but instead of saying she didn't know she just made something up. Wink

"Guk-mul" is kind of a generic term for broth. I'm not 100% sure, but "guk/gook" meaning soup, as in haejangguk, miyeokguk, etc. and "mul/mool" meaning water.

What you're looking for is more commonly referred to as "miso soup." The recipe is really simple, and you can find tons of variations online.

I'm pretty sure gukmul is just the broth (sans doenjang/miso paste).
That would be water, anchovy and/or shrimp stock a bit of soy sauce and sugar. Plus chopped spring onion.

You can then make miso soup by the adding soy bean paste, tubu, yubu and seaweed.

It's fish broth with seaweed. Usually anchovies are used. My friend made it for me when I was ill. Usually there isn't any dwenjang, but sometimes a little is added.
