Is there a limit to how much money you can exchange/change at the airport?
Would I be able to exchange about 3,000,000 won? |

The exchange booths in ICN wouldn't even blink at 3 million won.
Show your passport (they do not mark it), put the cash on the counter and choose the currency you want to buy.
In and out in about 2 minutes.

Whatever you do, don't take Korean money out of Korea. The exchange rates everywhere else for the Won are terrible. |

You can even ask for a better rate at the airport than what is shown. My wife asked last time I changed money and they gave me a little more money. It might have been because I had an account with the bank though (KEB). |

You will get a slightly better rate inside the international boarding area when you pass immigration. |
