Is it ever possible to book a return flight (for 12 months from the outbound date) and the change the return date to a date that is over 12 months from the outbound flight?
Im thinking of booking a flight, leaving in January with a return for xmas 2012. Could I change this to summer 2013 I decide to? Or in your experience, is this never possible?

Yes (KAL and KLM as examples) do (or did) allow you to extend a 1-year open ticket (rebook a flight for a date beyond the one year) but there are services charges (30-250k won) for doing it.
