| I haven't beed to Pizza School for a while now. The last time I ate one of their pizzas, it gave me food poisoning. You get what you pay for, I suppose. |

The topping cheese is 100% natural. It's only the string cheese that they stuff inside the crust that is artificial. They also don't mention any names, but they say they found this result at 6 different chains. So I guess the solution is don't order the cheese crust? |

Heartbreaking.
I'm moving back to an area where fast/easy/cheap food options are kind of scarce, and Pizza School was going to be a staple in my diet.
That being said, I'm not sure I actually care. It's a 5000 won pizza, and you get what you pay for.
And if it really is only the cheese crust, I don't eat that anyway. |

| Most pizza schools are owned by mom and pop franchises. Its going to be sad to see their business impacted negatively because of this news. |

| Don't think it's that big of a deal. I guess false advertising is, but its not like they're using stuff that'll kill you. They said the fake stuff isn't harmful to your health. |

What? Pizza should never be a "staple" food unless you're trying to gain weight.
Just eat Korean food with brown and barley rice and you'll live a hundred years. |

Thanks for the link. I think everyone thought that all of the cheese used was fake, but this would mean that most of the cheese used is 100% natural (I have never ordered cheese crust pizza anyways).
In regards to cheese costs, pizza cheese is not that expensive if you buy in bulk on gmarket. The great thing about cheese is that it can be frozen and used later on with nearly no change to its texture (basing this on personal experience), which means that buying in bulk is not a bad idea, unlike sour cream... |

Thank you for posting this! I saw the story as I was flipping through the channels, but I cant understand Korean..so I had no idea what the results of the tests were.
Hence the reason I am going to my first Korean class tomorrow! |

I find that grated cheese definitely holds up well in the freezer and for use in cooking.
Frozen cheese is not very good defrosted on put on a cracker or eaten plain.
When I buy a big brick of cheddar, shred and freeze most of it for use in cooking. The rest I keep in the fridge for when I want cheese taht won't be cooked. |

This is true, but as a former district manager for a pizza chain back in the US, I can tell you that cheese costs easily make up 35% - 45% of food costs for a pizza restaurant. I cant recall how many meetings and I went to where national managers and corporate types went on and on about reducing cheese costs, forcing employees to use the company-approved measuring cups (rather than topping a pizza by hand)...etc etc.
Cutting cheese costs even just a few percent can make big savings in the budget. That said, I doubt chains like pizza school are doing the same bulk of business as the chain I was working for, so their margin may be smaller naturally.
Frankly, Ive never had a pizza from pizza school, but after this story I think I will go check it out and support them simply because I have been in that type of position concerning cheese costs while at the same time trying to keep to a projected profit outlook. |

1 kilo bag of mozzarella from a supplier of pretty good quality which most restaurants here use is 10.000 won.
a pizza is probably 100grams of cheese
so that's 1000 won per pizza just from the cheese.
now the cheapest pizza at pizza school is 5000 won.
so the cheese takes up 20% of the cost. if they were using REAL CHEESE.
I don't know what kind of cheese they are using, but I did ask my local pizza school owner last night and he said the cheese comes from USA.
now it's possible the franchise buy in bulk and then have the stores by the ingredients from them, and maybe the cost of cheese works out less than 1000 won.
so factor in cheese, sauce, dough, toppings, labor a 5000 won pizza you should be making 3000 won profit on it.
I can't see the dough and sauce and the cheap pepperoni they use costing more than 1000won.
judging by the sauce they use, that doesn't look like quality tomatoes.
looks more like concentrate and watered down and thickened.
but still 3000 won profit on a pie. is really low, sure most customers order two pies and maybe some drinks so hopefully from each other you are taking 10-14000 won gross and your profit is around 6~8000won
but you really need to sell a lot of pies to bring home some money.
these shops are usually owned by old people who work it themselves.
but compared to the shops charging 20K a pie, pizza schools usually sell more volume and have less over heads, no drivers, less staff, no frills etc. |
