I've been working at the same uni for a couple of years now so I am a bit out of the loop when it comes to the documents required for a new E2 visa.
I remember the CBC and how we have to get it apostilled, but I have noticed employers are also asking for a "certificate of career". It is a note of the exact dates of each job you have had. I don't know if it is meant to be from your previous employer or whether you write it yourself.
Does anyone have any further information about what the "certificate of career" is? It may have other names that I am unaware of.

My university will issue these. I've seen coworkers get them.

I have a couple of letters that look like they fit the bill but I don't have a letter for each of my jobs. Does anyone know what the Korean name for these certificates would be?
Also why are they suddenly asking for these? Have they always asked for them and I've just forgotten?

Search the threads for "Certificate of Employment". There are few threads discussing them. It is a basic "just the facts, ma'am" form describing how long your worked, where, pay, job duties, etc. Think of it if like a simple reference letter.

By law all previous employers are obligated to give it to you. If asked for within three years. Past three years since employment, they do not have to give.

The letter is used by employers to show experience.

I had a look in my paperwork drawer and I have some of these certificates but not for every job I've had. I hope that won't be a problem in the future.
