If you get roundtrip airfare paid for by your employer, and you want to stay on in Korea or go to Japan etc. (not return home), how does that work?

Do you not get the return airfare?

It depends on your contract.

Some allow you to change the destination and they will pay up to the same as a ticket home.
Some don't allow changes. Go home or forfeit the ticket/funds.
Some just give an exit allowance equal to airfare and let you do what you want.

Get it in writing in the contract or pay the consequences later. It is not a labor law issue and they won't help you with it if it is not in your contract or if what you want to do is different than your contract.

Can you request that you would like the return airfare paid in cash - before signing the contract?

I would ask about it as an "option" but not a request. This depends on how much you want the job. If they will not accept your desired option, will you take the job anyway?

You really can answer this yourself, if you will then there is no need to ask now. If you won't take the job, then ask and be ready for another school.

I haven't asked schools myself for airfare until one school wanted to cut the contract period short and not have to pay me for the last month. So, I told them I should still get airfare then. It was unexpected, but they paid 85% of it knowing I was just transferring to another school in the same country and not flying anywhere.

You could tell them the airfare back back home and then compare it with a flight to Japan. I am sure the Japan trip will be less and just tell them they could pay for that one instead. Do this a few months before the end of the contract period.

It's not something I would bring up before a contract period. There is something about going to a school but not wanting to stay in the country that just comes off as if you aren't serious.

If there's anything you really want in your contract, you should ask before you sign. If you wait, you've only yourself to blame when they refuse later. It is reasonable with no extra cost for a school to pay cash in lieu of airfare at the end of a contract, so if they refuse this polite request and you lose the job you're probably better off.

@Mike410 : Did you make it to Korea yet? How'd the flight thing go for you?
