Because there can be HUGE differences in levels of service; and tips reflect that difference in quality; not wages. There are some VERY good servers out there...they know wine, they know food, they know service. Yet they probably get paid the same wage as the lowest entry server at Earls. The Food industry has brilliantly shifted the responsibilty of compensation for skill and experience directly to YOU, the consumer.
The last job I worked, there was a 3 year wait to be a server(meaning you had to work as a support staff-bartender, host, floor supervisor)...and you had to attend all sorts of wine tastings, and recipe trainings. And yet, you did it gladly, because there was ALOT of money out there to make. As a Server, I made more than my teaching jobs here and back home...$160/day on average. However, it was a hell of alot of work in doing that job, and alot of stress too-more than here on average I would say. Think that's too much money? Fine. Go to McDonalds. |

Worst tip I ever left (well actually buddy of mine I was with left it) was at a Friday's here in the States. Service was horrible. The drinks were wrong, food was wrong and cold, server had the personality of a malnourished, rabid wolverine and the body odor to match. So my buddy takes a steak knife and spends ten minutes cutting a penny in two, and left the smaller half as a tip.
I still laugh at the things that guy would do. |

As it should be. Extra effort warrants reward. I find it refreshing to be somewhere tips arent expected for ordinary service. |
