I'd really appreciate some advice on this.
There are so many books out there, anyone know of one or two good ones?

From a listening perspective on the TOEFL, at least:

Longman Intro/Student (beginner/intermediate)
Insider (advanced)
Heinle & Heinle (high intermediate)

Stay away from Pagoda as many of the questions are erronous.

more than a native speaker: An Introduction for Volunteers Teaching English Abroad
by Donald B. Snow, Don Snow

It's an excellent book--I've heard some say that if they only had one book for teaching ESL, this would be it. I'm glad I have it. Very Happy
