Ribeye (beef).

The "kkot" is because of the appearance, right?

This comes straight from the steer -- www.Infomeat.co.kr:

  Outside Skirt Cool

ȸ Minced raw beef boiled rice with assorted mixtures Rolling Eyes

  Boneless Short Rib

  Beef-rib soup

ɵ Ribeye Roll, Lip off (When was the last time you had some good ol' "Lip Off"?)

  1) Ginseng chicken broth, 2) samgyet'ang

  Fresh Meat (Yeah, but...Confused )

 ø 1) A cold noodle dish Rolling Eyes , 2) iced vermicelli

 ȸ minced raw beef

 Ҹ 1) vermicelli, 2) fine noodles

äҰ vegetable grilled meat Rolling Eyes

  Loin

  ribs of pork Rolling Eyes

  boiled rice with assorted mixtures

  Beef feet soup Exclamation Razz

The Guru had some nice "Outside Skirt" last night, indeed he did.

Yeah, well my Korean girlfriend can beat up your Korean boyfriend Razz Wink

She says Koreans don't eat baby cows, just us savage Westerners, and you can quote her on that!

Seriously, she says that the just refers to the pattern that the fat makes in the meat, not that it comes from a baby animal of any kind.

neithers better than the other

plus 곫.... that is much more savage, but good for a laugh

It's not veal. Or at least its not any kind of veal that I'm use to. Veal should be less marbled, with less surrounding fat, and lighter in color. If you look at the muscle (meat) its from a well exercised part of the cow. Can't really tell between round or chuck, but I'd put my money on chuck. If you look at the cut on the lower left you see a cut of beef that looks very similar to brisket.

No matter where in the world you are, beef is always divided into primal cuts. That is rib, loin, chuck, and round. This are then divided furthur into the cuts, this is where different cultures have different cuts (In Korea you will see cross cut ribs)

The really good stuff costs and arm, but the marbled aspect of the fat and meat makes the cut very tender.
