What exactly do they mean?

Does it include plates, silverware, glasses, etc.?

What other "essentials" are missing and should I expect to buy (or bring with?)

It varies from one place to the next, but I wouldn't count on clean bedding

Furnished means whatever you put in the contract. The definition of furnished varies greatly from one person to the next.

What I consider furnished is a bed, closet, desk, table, chair, TV, drying rack, washing machine, microwave, 2gas burner or oven, air con and enough basic dishes(knives forks spoons, plates, cups etc for at least 2 sets), basic pots and pans.

In my worst (first) place I arrived to find that I had a yo (Korean 1" thick futon), an old wardrobe, a fridge, a stove, a kitchen table and 2 chairs, plus assorted grimy dishes left over from the last teachers... and that place was billed as a "fully-furnished Western-style apartment".
Ask about EVERYTHING.
"Will it have a washing machine?"
"Will it have a bed?"
"Will it have a toaster?"
etc.

Ask about everything... and what? Ruin all the fun? No thanks.

I have a picture in my head of what 'furnished' means and it's pretty leinent... if they screw me over, it'll be their loss in the long run.

When I arrived my apartment was a little rough. If you have a decent employer they will let you furnish it and then reimburse you, or go out with you (as they did in my case). Make sure you have everything writtend down and provide them with a list...it worked for me! Cool
