have plenty of time so that is not an issue, would we have to get a flight to somewhere else to go by boat or could we get a boat to thailand from here ?

I like the spirit of adventure here. Planes are so dull.

How about taking a boat to China, then train through China and Vietnam to Saigon, and then finally cross overland through Cambodia?

Another option, see if you can get on a cargo ship destined for Singapore, and then go up overland to Thailand.

There are a number of departures from Incheon International Ferry Termional to China which could be useful, if you wanted to do the ship/train combination:

From China, you can go overland by train to Vietnam and make your way across Cambodia to Thailand as a previous poster said. I'm actually planning a trip next month from Shanghai and Hong Kong down through Yunnan province in South Western China, then through Laos and then Thailand. There are boats you can take down the Mekong from Yunnan to Laos or Thailand. I've been getting lots of info from this forum: http://thorntree.lonelyplanet.com/

That should be possible, but it is not an inexpensive option. Cargo ships are about W100,000 per day for passengers which includes three meals.
