Should a signed contract and passport page be sent over by mail ? .. or will a faxed copy do ?

Both are legally binding, but many would prefer mailed paper because the thermal print on a fax tends to wear off after a short while.

But immigration will accept both though yes ?

Perhaps ask the particular immigration office as to how they wish the documents to be submitted.
