I've also heard that cooking with olive oil makes it unhealthy somehow... not sure though. But yes, overall olive oil is better than other oils for us.

bake the potato. Cut it in half. Scoop out the potato, leave a bit in the skin. Mash with some tofu, tuna, and what ever seasoning you like. Put back into the potato skins. Put on the top of each a piece of cheese.

Back in the over to melt the cheese. Great, filling, and low in calories, if eaten as a meal with a salad.

Surprisingly, just boiled spuds plus a can of tuna is pretty good. Found that out once when that was all I had in the kitchen.
Potatoes are great. Broccoli too.

Boil the potato. Peel or do not peel, your choice.
Let cool. and cube it. Cube an apple, and a cucumber.

Dressings: Choose one.
mayo

balsamic vinegar

yogurt with dill

no dressing, just salt and pepper

italian dressing (oil and vinegar, salt pepper, garlic and italian seasoning if you have it.

Good old ketchup and mayo.

a LITTLE bit of sesame oil

You can add a can of tuna, or some diced chicken.

This really is healthy
