| I've heard about Kefir but never made any. I might be tempted to give it a go. Does it matter what kind of milk you use? |

Kefir's not quite the same as yogurt...it's a bit more sour and can be clumpy. It's delicious, though. I make kefir and yogurt all the time.

If you go for either yogurt or kefir, use the best milk you can get your hands on, in this order:
Pasteur gold label
Pasteur blue label
Denmark whole milk
If you want to use lowfat milk (which I discourage--watery yogurt and fewer health benefits), use the same brands, just buy the lowfat.
If you can't get those, I have heard that Seoul Milk full-fat gives a good yogurt. |
