You are correct. Until immigration actually has your documents you are under no obligation to accept any position.
AFTER you have signed on the dotted line you can still back out with minimal repercussions (you can't start the paperwork for a new job till the old paperwork expires (90 days after the visa confirmation number is issued)).
If you get as far as actually getting the visa in your passport then you are stuck until the expiry date on the visa (90 days for everyone except Americans).
